| BROILED COCONUT ORANGE CAKE | |||

| 1 cup sugar 1 cup all-purpose flour 1/4 tsp. baking soda 1/8 tsp. salt 1 can (11 oz.) mandarin oranges, drained 1 egg Topping: 1/2 cup packed brown sugar 2 tbsp. butter or margarine, cubed 2 tbsp. milk 3/4 cup flaked coconut |

| In a mixing bowl, combine the sugar, flour, baking soda and salt. Add mandarin oranges and egg; beat on medium speed for 2 minutes. Pour into a greased 8-in. square baking pan. Bake at 350 for 30-40 minutes or until a toothpick inserted near the center comes out clean. Cool on a wire rack for 15 minutes. Meanwhile, in a saucepan, combine the brown sugar, butter and milk. Bring to a boil over medium heat, stirring occasionally. Cook and stir for 2 minutes or until sugar is dissolved. Remove from the heat; stir in coconut. Pour over warm cake. Broil 6 inches from the heat for 1-2 minutes or until top is browned. Cool on a wire rack. |
