BROCCOLI POTATO SOUP
2 cups broccoli florets
1 onion, thinly sliced
1 tbsp. butter or margarine
1 can cream of potato soup, undiluted and condensed
1 cup milk
1/2 cup water
1 tsp. fresh basil or 1/4 tsp. dried basil
1/4 tsp. pepper
1/3 cup cheddar cheese, shredded
Using a pot, saute the broccoli and onion in the butter until tender.  Add in the soup, milk, water, basil and pepper.  Cook until heated and then add the cheese and stir until cheese melts.
