BAKED SALISBURY STEAK
Yields about 8 servings
2 eggs, lightly beaten
1 cup quick-cooking oats
1/2 cup each diced green pepper, celery and onion
1/2 tsp. salt
2 lb. ground beef
1 can condensed golden mushroom or cream of mushroom soup, undiluted
3/4 cup water
1/4 tsp. pepper
In a large bowl, combine the eggs, oats, green pepper, celery, onion and salt.   Crumble beef over mixture and mix well.  Shape into eight oval patties.  In a large skillet, brown patties on both sides.  Place patties in an ungreased 13x9x2-in. baking dish.  Combine the soup, water and pepper; pour over beef.  Cover and bake at 350 for 30-35 minutes or until the meat is no longer pink.
