BAKED PORK CHOPS
Yields 4
1/4 cup olive oil
3 onions, sliced
5 bay leaves
4 center cut pork loin chops (approx. 1 1/2 lb.)
1 egg beaten
1 cup bread crumbs (italian flavored if possible)
1/4 tsp. salt
1/4 tsp. pepper
nonstick cooking spray
Preheat oven to 400 degrees.  Combine the oil, onions and bay leaves in a 9 x 13 baking dish.  Using 2 bowls, place the beaten egg in one and the bread crumbs in the other.  Dip the chops in the egg then the bread crumbs.  Place the pork chops on the onions and sprinkle with salt and pepper.  Spray lightly with the nonstick cooking spray.  Bake for 40-45 minutes or until cooked through.  Remove the bay leaves before serving.
