Butterscotch Bread
mmm...

2 Cups all-purpose flour
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1 Cup packed brown sugar
2 eggs
1 Cup buttermilk
2 Tbsp. melted butter

preheat oven to 350 F degrees
mix flour, bakin powder, baking soda, and salt together in large bowl
in sauce pan, melt the butter and brown sugar, use some of the buttermilk to help the sugar melt
cook the sugar mix until it begins to bubble in order to bring out a carmel flavor
let cool til just warm
beat the eggs in another bowl with the rest of the buttermilk
slowly add in the carmel mixture
next add this slowly to the dry flour mix
batter should be moist, but not wet... add in flour as needed
put into greased loaf pan
bake for 60 minutes, until a skewer/toothpick/knife poked in the center comes out clean.

mmm... tasty! it's a slightly sweet bread with notes of butterscotch... and the crust has an almost candy-like quality to it!
