Irish Brown Bread, 06Jul03

2 Cups, whole wheat flour
1 Cup, all purpose flour
1/2 Cup, pinhead (steel-cut) oats
1/2 Cup, wheat germ
1 Tbsp, baking soda
2 1/2 Cups, buttermilk
2 Tbsp, honey

combine dry ingredients in large mixing bowl
make a well in the middle of the pile
pour buttermilk and honey in the well
mix from the middle outward until all ingredients are incorporated
the dough will be sticky and gooey :) if you work it with your hands, keep them wet to prevent sticking
put the dough into a greased baking pan of your choosing
(i used a loaf pan, some recipes call for a round cake pan)
wet your fingers and smooth and even out the top
use a knife and cut a cross in the top of the loaf (to prevent breaking... old wives tale: for good luck ;))

preheat oven to 400 degrees farenheit
bake bread at 400 for 20 minutes
reduce heat to 225 and bake for another 30 minutes
check doneness by sticking a toothpick in the center... if it comes out clean, it's done, otherwise bake a little longer

mmm... mmm... good!
