FRESH STRAWBERRY ROLL

Cake Part:

3 eggs

1 cup sugar

5 tbsp. water

1 1/2 tsp. Vanilla

1 cup cake flour

1/2 tsp salt

1 tsp baking powder

Filling Part:

1 pkg (8 oz) Cream Cheese - softened

2/3 cup of powdered sugar

1/4 cup butter - softened

1 tsp vanilla

1 1/4 cups of strawberries

Preparation:

Beat eggs till light and lemon colored. Gradually beat in sugar, then add water and vanilla.

Sift together flour, salt, and baking powder.

Fold dry ingredients into the egg mixture. Pour all into a well greased and floured jelly-roll pan. Bake at 375 degrees F for 12-15 minutes.

Turn onto a dish towel coated with powder sugar. Roll with towel. Cool on a rack.

Beat the filling ingredients well and fold in the strawberries.

Unroll cake, spread the filling, re-roll.

Decorate with a few sliced strawberries and sprinkle with some powdered sugar.
