BLUEBERRY LOAF: 1 cup all purpose flour 3/4 cup of whole wheat flour 1/2 cup of shreds of wheat bran cereal 1/3 cup of granulated brown sugar substitute
2 tsp. baking powder 1/2 tsp. baking soda 1/2 tsp. salt 1/4 cup unsweetened orange juice 1 egg 1 tbsp. vegetable oil 1 cup blueberries Vegetable cooking spray Preparation: Combine flours,
cereal, brown sugar substitute, soda, and salt into a medium bowl, stirring until well combined. Combine orange juice, egg, and oil, in a large bowl and beat on medium speed of electric mixer until well blended. Add
in flour mixture, stirring until just moistened. Gently fold in blueberries. Spoon batter into a 8 1/2 x 4 1/2 x 3 inch loaf pan coated with cooking spray. Bake at 350 degrees F for 50 minutes or until a wooden
toothpick inserted into the center comes out clean. Cool in pan 10 minutes then remove from pan and place on a wire cooling rack and allow to cool completely. Yield: 16 slices. |
