Now I ask you can you really celebrate Easter without remembering these rainbow colored hard boiled eggs from your own Easter baskets and dried beef served on toast? I always made an extra amount of colored eggs for Easter so that we would have some for breakfast and the brothers could still continue to hide eggs all day long. This recipe makes as much as or as little as you want. For a family of four, you will need 6 hardboiled eggs and one can of dried beef. Begin with melting 4 tablespoons butter in a frying pan. Don't let it get brown. Chop up the dried beef and stir into the melted butter. Cook briefly. Add one or two teaspoons of A1 sauce (to taste). Be careful - don't add too much or the flavor overpowers the rest of the ingredients. Add 4 level tablespoons of flour. Now add two cups of milk to complete the sauce. Add chopped eggs. Make sure that the flavors mingle. You many need to adjust by adding a small amount of milk because the eggs also cause the sauce to thicken. Top it off with pepper and parsley flakes. (My mother said that parsley was good for the digestion; so she would use fresh or dried in many recipes. Serve over toast and Enjoy. Happy Easter morning! |
