Yorkshire Pudding!

INGREDIENTS

1 1/4 cups all-purpose flour
1 teaspoon salt or to taste
2/3 cup milk
2/3 cup water
3 eggs
4 tablespoons roast beef drippings
1/4 cavenne or to taste
Yorkshire pudding!  What could be more appropriate for a Thanksgiving or Christmas evening dinner? 

In a large bowl, combine flour and salt.  With a handheld mixer, add the milk, and then the water and egg.  Beat until well combined and bubbly.  Let stand for one hour covered.

Preheat oven to 450 Fahrenheit. 

Divide drippings amoung the six or eight muffin pan cups.  Heat the cups in the oven until almost smoking.  Beat batter until bubbly and stir in the cayenne.  Divide among muffin cups and bake for 10 minutes in lower third of the oven without opening the oven door.  Reduce oven temperature to 350 degree and continue to bake for another 10 minutes until puffed, crisp and golden brown.
