Aunt Mary Jo's Smothered Hamburgers!

My sister Mary did not enjoy cooking as much as Gin and I did, although she did enjoy eating.  Her husband liked to cook so he was the designated chef in the household.  Mary did have two recipes that she shared with me over the years.

Smothered Hamburger


This is a very simple recipe, but she would often ask for it as a child.  She would prepare it for me when I visited with her.

INGREDIENTS AND DIRECTIONS

1 or 2 pounds ground beef
1 Chopped onion
Salt to taste and lots of BLACK PEPPER

Brown in beef in oil.  Add the onions.  Cook thoroughly.  Drain the excess grease. Add salt - don't forget lots of BLACK PEPPER!

It may not sound like much, but it is good.  It is also one of the oldest recipes around.  Europeans coming back from the Crusades in the 12th and 13th centuries would cook a dish similar to this.  While they did not have ground beef, they had cubed beef.

My Variation

Of course, I have to dabble and experiment with everything.  I did serve the above recipe when you were growing up, but from someplace I found another way to fix it. 

All you do is add a can of Campbell's ABC Vegetable Soup (don't dilute it). 

This is a great recipe for campers and weekend vacation trips to cabins.
