Richard's Favorite Molasses Cookies!

Rich has loved this recipe since a young child.  He has asked me the past several months to bake him a batch, but I told him I could not because the recipes were packed away.  I finally came up with the tried and true recipe.  It looks as though I will have to bake a batch of him soon.  I can almost smell them baking.

DIRECTIONS

Cream shortening with sugar. Beat in the egg, molasses, and boiling water.  Stir in 1 cup flour, soda, and salt.  Add spices and remaining 4 cups flour.  You may not need all, but you will want most of it.  You want it to be a soft ball that you can work.

Take about a teaspoon of the mix and roll it in sugar on wax paper.  Place on cookie sheet and flatten into round cookie shape with back of spoon.  Do that for each cookie - don't forget to roll each one in sugar.  Bake on greased cookie sheet at 375 degrees for 10 - 12 minutes.

Okay, Rich, if I bake up a batch will you come out and eat them?
INGREDIENTS

1 cup shortening
1 1/4 cups sugar
1 egg

1 cup molasses (I always used the light or golden type.  The brand that I used was Brer Rabbit, but I am sure that any one is good.  Some have a stronger molasses flavor.

1/3 cup hot or boiling water
1 cup flour

1 teaspoon baking soda

Dash of salt

1 Tablespoon ground cinnamon
1 Tablespoon ground ginger
1 Teaspoon ground cloves

4 cups flour, as needed (enough to make a smooth dough or ball in the mixing bowl)

1 cup sugar and wax paper
