Hush puppies!

This is a fun recipe if for no other reason than the story of its origins.  But it is tasty also when you serve these "puppies" with fish dishes, fish chowders or fish stews.

Combine eggs, onion, and milk together in a mixing bowl. Mix baking powder, baking soda, salt, sugar, cornmeal, and flour together. Then mix the dry ingredients slowly into the milk mixture.  Blend well.

Drop by spoonfuls into hot oil and cook until golden brown.

Why the name hush puppies, you ask?  Well, it seems that this is an old southern recipe whose story has been handed down from one generation to the next.  This recipe was developed by fisherman and hunters who took their dogs with them on camping trips. 

According to one story, in the evenings around their campfires while the hungry  campers were waiting for their fish or rabbit to cook, they would  prepare several batches of these "puppies". 

Their dogs would be getting hungry smelling the food cooking.  To stop their dogs from whimpering, the campers would share these little treats with the dogs to quiet them, and say "hush, puppies" as the doggies gobbled up the snacks. 
INGREDIENTS

2 eggs, slightly beaten
1 medium onion, finely chopped
cup milk
2 teaspoons baking powder
teaspoon baking soda
1 � teaspoon salt
1 tablespoon sugar
2 cups yellow cornmeal
cup all purpose flour

Vegetable oil, for deep frying
