The Giblet Gravy!

You did not think that I was going to forget this did you?  No way.  The key to success on this one is to make a lot of it!  Go back to the step when you boiled the giblets, the turkey neck, and the extra chicken livers.  Add lots of water, butter, chicken broth.  Add salt and pepper to taste. 

Remember, you can do this earlier in the day and refrigerate. Use a deep, big pan.  Melt one stick of butter.  Add 5 to 6 tablespoons of flour.  Stir as it thickens. 

You will have to experiment with the right amount of flour.  You may need to add more flour because you will add a lot of liquids.  Slowly add all of the broth from the giblets, add the broth from the cooked turkey.  Add another can of chicken broth if it looks like you will need it, but don't forget - you do want the gravy to be thick. 

Add about a cup of milk.  You can also add
to one cup of white wine.  Experiment.  Don't forget to add the giblets!  Remember the mashed potatoes.
