Granddad's variations to the cornbread dressing!

Granddad loved the cornbread dressing, but he had his own special favorites added to the dressings. "Grandfather" use to bake his special dressings in a smaller baking pan. One was an oyster dressing; and the other, a sausage dressing.

Oyster Dressing


It is simple. You just add two jars of fresh oysters to the dressing mixture before you bake it. Drain the juice. Save it for oyster stew if you like that dish. If the oysters are large, cut them into one-third or one-half.  Stir them into the dressing mix and bake. If you want to try just a small amount, use a portion of the cornbread dressing and one jar of oysters.
Sausage Dressing

I really liked this version and made it several times. You add a roll of Farmer John's HOT (spicy) Sausage.

Brown it until cooked. Drain all of the grease.  Add to the cornbread dressing. The sausage gives it a rich, full flavor. The bit of spice is nice and not too much when mixed into the cornbread dressing.

If you are adventurous try these variations. You don't really taste the oysters or the sausage.  Both of Granddad's variations are terrific!
