Aunt Ginny's Quick Chicken Dishes !

Vermicelli Chicken

Cook one box of Rice a Roni and add one cup chopped chicken.  Saut�
cup onions and mushrooms.  Mix into the Rice a Roni and chicken.  Cook until heated through and the flavors mingle. 

Add
cup of ripe olives.  This could not be easier for a quick meal, and it is tasty enough to serve to surprise guests.  

Aunt Ginny is going to add more recipes from time to time.  She thought that the idea of the website is great fun.  
Chicken ala Orange

One whole chicken, split in half (lengthwise).  You can substitute chicken breasts if you prefer.  You open one can of frozen orange juice - such as Minute Maid frozen concentrate -and spread it over the chicken. 

Cook it in an oven at 350 degrees for about one hour or until golden brown.  Check it the last 20 minutes.  You may need to add
cup of water.  You want it to be juicy. 

You may leave it as is, or for variations you may want to add one small can of sliced water chestnuts or mushrooms, fresh or canned.  If you want to add herbs such as cumin, or thyme, you can do so. 

Sprinkle with chopped parsley before serving if desired.  It is good served with rice.  You will get your vitamin C and have a party dish in addition.
