Perfect Fried Chicken

1/3 cup flour
1 tsp. paprika
1 - 2 - 3 lb. chicken, cut up
Crisco shortening

Combine flour, paprika, 1 tsp. salt, & 1/4 tsp. pepper in paper or plastic bag; add 2 or 3 pieces of chicken at a time & shake. Heat shortening (1/4" deep in skillet). Brown big pieces first; then add remaining pieces (don't crowd). Brown one side; turn with tongs. When lightly browned, 15 to 20 minutes, reduce heat; cover tightly. (If cover isn't tight, add 1 tbsp. water.) Cook until tender, 30 to 40 minutes. Uncover last 10 minutes. Makes 4 servings.

Cream Gravy
1 1/2 cups milk
3 tbsp. flour
3 tbsp. pan drippings

In a screw top jar, shake half of the milk with flour, 1 tsp. salt, & dash pepper till blended; stir into drippings in pan., Add remaining milk. Cook, stirring constantly, till thick & bubbly. Cook 2 to 3 minutes longer. Makes 1 1/2 cups.

Before you cook the chicken, rinse it with cold water.
