Deluxe Chicken & Riced Casserole

1 chicken or 4 chicken breasts (it's easiest to use boneless, skinless chicken breasts, but it costs more)
1 pkg. Uncle Ben's original long grain & wild rice
1 jar sliced mushrooms
1 can each - Cream of chicken soup & Cream of Mushroom soup

If using whole chicken - boil in salted water until tender. Cool. Cut up.
If doing it the easy way - cut chicken into bite size pieces, then stir fry in a skillet with about 2 tblsp. of vegetable oil, until white. Mean while, cook rice as directed. In big bowl, mix both cans of soup, mushrooms & cut up cooked chicken. Place chicken mixture in buttered casserole dish. Bake uncovered at 350 for 45 minutes.
