Chicken and Biscuits
1/2 cup chopped onion
6 tablespoons butter
1/2 cup flour
3 cups chicken broth (I use 2-16 oz. cans)
3 cups cubed cooked chicken
1 - 10 oz. package frozen peas & carrots, cooked, drained
Cook onion in butter till tender, but not brown. Blend in flour & 1 tsp. salt. Add broth all at once. Cook & stir till thick & bubbly; add remaining ingredients. Pour into 9 x 13 pan. Spoon bisquick on top & bake at 450 for about 15 minutes.
Use the dumplings receipe on the box of bisquick for your biscuits.
Stewed Chicken:
Put a whole or cut-up chicken in a big pan & cover with water. Season with salt & pepper; add some chopped onion & celery if you have any. Bring to a boil. Turn down the heat & let simmer for about 45 minutes to an hour. Cool & tear apart.
