2 cups flour
½ teaspoon salt
2 teaspoon sugar
1 ½ teaspoon baking soda
1 teaspoon baking powder
2 cups buttermilk
3 eggs, separated
1 teaspoon vanilla
3 Tablespoons melted butter




 

Combine dry ingredients and sift into a large mixing bowl.

Beat buttermilk, egg yolks, vanilla, and melted butter together. Stir into dry ingredients.

Beat egg whites until stiff and gently fold into flour mixture.

Add more buttermilk if batter is too stiff.

Heat aebleskiver pan with one tablespoon of cooking oil in each cup.

When the oil is hot, pour 2 Tablespoons of batter into each cup.

As soon as the batter sets around the edges and becomes firm, turn it a quarter turn using a knitting needle.

Keep turning until round balls are formed. Turn balls constantly to keep them from burning.

Continue to cook until knitting needle comes out clean after being inserted into centers.

Remove aebleskivers from pan and roll in powdered sugar while warm.

Serve immediately with a variety of jams or syrup.
