Sausage Cheese Balls

1 pound Ground sausage
4 cups Sharp cheddar cheese, grated
3 cups Bisquik

These proportions should make two large cookie sheets of sausage cheese balls.

 

Tear sausage into pieces, and place in bowl.

Add cheese and microwave for one minute until heated.

Add Bisquik and knead together by hand until mix fills one large bowl.

Pinch off pieces shape into 1-inch balls.

Place on cookie sheet. Bake at 350 degrees for 15 minutes.

Sausage cheese balls have been a tradition in my family since as far back as I can remember, one that has carried on, persistently, even into the present. It all started with my great-grandmother. When we kids were younger, along with our parents, on social occasions she would make sausage cheese balls for all the children. As this tradition continued, it was passed down to my mom and my mom's sister, as well as a few select other family members. Even though we don't have them as often, we still make them for important family events or social occasions, or whenever someone asks for them.

Sausage cheese balls, as they have been passed down in my family, are appetizers and light snacks, made from ingredients that can be found in all grocery stores, so they are an easy and tasty treat to make. We serve them in amounts of thirty or more and eat them along with any meal in the day; however, they can be eaten by themselves for a great breakfast or late night snack. Thanksgiving and Christmas are the times when all the family gathers around to enjoy them, but sometimes someone makes to send to others, like me: a hungry young man away at college.

Sausage cheese balls are easy to make, and usually one person can make them on their own with no problem, but when there is a large family presence, to make sufficient amounts, more than one person is needed. During these times, the kitchen is a scene of efficiency, with my aunt putting cookie sheets full of sausage cheese balls in the oven while my mom kneads more Bisquick into the cheese and sausage for the next batch. While this is going on, the family usually gathers in the dining room of our home and chats about all that has happened to each other over the year. When the cheese balls are brought in everyone gathers around the table.

Sausage cheese balls have been a favorite of mine since I was a child. I remember since back then how those in my family have always made sausage cheese balls and that it has been a prevailing tradition that stuck with us. Sausage cheese balls bring back memories of my childhood and my life and all the highpoints of it, like Christmas and Thanksgiving. The fact that it is extremely good and easy to make, combined with the memories it brings back, makes this my favorite family dish.
