This recipe for chicken parmesan is my favorite food because it holds a special place in my heart. It is the first food that my dad taught me how to cook.

My dad has always been extremely busy. When I was little, I barely ever saw him because he was always at N.C. State working on his Ph. D. When we moved to Pittsboro, North Carolina, he was usually too busy with work or coaching soccer to spend a lot of time with me. This meal takes less than thirty minutes to prepare, so it is something quick that we can make together while spending a little time together.

About a year ago, my parents got separated, and my mom moved out. She usually cooked everything, so my dad and I were kind of left hanging. I cooked this a lot because it was one of the only things I knew how to cook, but also because it's something that my dad and I have in common, since it is our favorite food.

Now, when I come home from work late at night and he is just getting out of coaching a soccer practice, we will both sit down in the kitchen and make this meal together.
