Pirate Palate Winter Cranberry Bars

Filling
1 can whole cranberries
1 8 oz package pitted dates, chopped
1 teaspoon vanilla
2 cups all purpose flour
2 cups rolled oats
1 ½ cups packed brown sugar
½ teaspoon baking soda
¼ teaspoon salt
1 cup butter, melted


Glaze
2 cups powdered sugar
½ tbs. vanilla
2/3 tbs. orange juice

 

Filling

Combine cranberries and dates, and then cook on medium heat for 15 minutes.

Stir in vanilla.

In a large mixing bowl, combine all dry ingredients.

Pour in butter till well blended.

Put half the oat mixture in the bottom of a 13x9x2 baking pan.

Bake at 350 for 8 minutes.

Carefully spread filling over the baked mixture.

Sprinkle remaining mixture atop.

Pat gently.

Bake for 20-22 minutes more.

 

Glaze

Mix powdered sugar, vanilla, and orange juice.

You can add orange extract if you want.

Drizzle glaze onto the cranberry bars.
