Pirate PalateEnchiladas

An Old El Paso Enchilada Dinner Kit
1 pound lean ground beef or chicken
2/3 cup water
3/4 cheddar cheese, shredded
sour cream
avacado, diced
tomato, diced
jalapeno, diced
scallions, chopped



 

Cook beef or chicken in skillet over medium-high heat, and drain grease.

Add water and seasoning mix from dinner kit.

Stir over high heat until liquid is cooked out.

Remove from heat.

Add cheese sauce from dinner kit.

Pour first pouch of enchilada sauce from dinner kit into an ungreased 11x13 glass dish.

Place about 1/3 cup of meat mixture on each tortilla.

Roll tortillas and place in the dish with the seam sides down.

Pour second pouch of enchilada sauce over tortillas.

Top with shredded cheese.

Cover pan with foil.

Bake in an oven preheated to 400 F for 20 to 22 minutes or until cheese is melted.

Top with sour cream, avacado, tomatoes, jalapenos, and scallions, if desired.
