Pirate PalateEasy As 1-2-3 Coconut Pie

1 stick of margarine or butter, melted
2 cups of sugar
3 eggs
1 large can of evaporated milk
1 teaspoon of vanilla
1/2 pound of coconut
2 prepared 9-inch pie shells

Yields two 9 inch pies.

 


 

Using a mixer (hand or stand mixer is acceptable), combine the butter and sugar in a medium bowl.

Add the eggs, one at a time, into the butter and sugar mixture. Allow time between adding so eggs can dissolve.

Add evaporated milk and continue to mix.

Add teaspoon of vanilla.

Add ½ lb of coconut.

Mix well.

Put into pie shells.

Cook at 325 degrees for approximately 1 hour 15 minutes or until brown.
