Pirate PalateCarrot & Zucchini Crock Pot

My dad's mother, Shirley (my grandmother), is an excellent cook and baker. She makes almost anything, and generally the meals or dishes she prepares are creations she makes up on her own. She is able to estimate measurements for ingredients without using measuring utensils.

My grandmother loves to cook meals for her whole extended family for every holiday. She enjoys having everyone over to her house for each occasion. She usually has to start preparing the food early in the morning because she makes a variety of dishes to try and satisfy everyone. She generally knows each family member's favorite foods.

She used to not let people lend a helping hand in the kitchen. I would ask her if she needed any help and she would say no. Now she accepts my offer since she is getting older and it has become more strenuous on her. I have learned a lot of new cooking techniques by just watching her.

Every time my grandmother invites my family over for a special event, we always look forward to eating what she has made. She tries to change up the recipes for what she makes, but some recipes are always repeated each time we go. For instance, she always has her famous side dish of carrots and zucchini. This dish never gets old!

The process of preparing this recipe is fairly simple, but requires a lot of time to cook. This would be one of the first recipes she starts preparing in the morning, so it will be ready when guests arrive.

Her dinners are generally served buffet style since she prepares so many dishes and there are a lot of people. You will never leave her house feeling unsatisfied, just maybe a bit full. My grandmother always encourages everyone to eat second servings, so there won't be as many leftovers.

The carrots and zucchini crock pot recipe is one of my favorite dishes that my grandmother prepares. Over spring break she invited just my immediate family over for dinner since I would not be there for Easter. She made this recipe, because she knew I would be disappointed if she hadn't.

This recipe generally complements any other main dish. It is tastier than any other standard vegetable recipe, because the vegetables come out very soft. Also, the juices from the vegetables add a delectable taste.
