When an individual is asked what their favorite food is, they usually respond with a gourmet food such as filet mignot, crab legs, or caviar; not in my case. My absolute favorite food is my mom's macaroni and cheese.

It seems as if each generation of my family specializes in one certain food. My great grandmother's chicken and dumplings would blow anybody's out of the water. Even if somebody else used her recipe, it would never compare to hers. My grandmother can make a lemon coffee cake that is to die for. Nobody knows how she makes it, and she refuses to tell her secret. My mom's specialty is her Deluxe Macaroni and Cheese. The amount of cheese she puts in it is enough to put three cows out of the milk business.

She received the recipe from a friend three or four years ago, and I have loved it ever since. She used to make it only on special occasions because the ingredients are expensive, but over time, things changed. It seemed as if every night my brothers and I would ask if we were having the macaroni for dinner. After a few weeks of begging, it became a regular thing for her to make it. It did not matter what main dish we were having for dinner; the macaroni and cheese would be there also.

The macaroni and cheese is so rich that it should be eaten in small doses. I don't believe it's the healthiest food for the body either. The macaroni is good alone, but fried chicken and mashed potatoes with gravy complement it great.
