All my life, I thought that this pumpkin cookies recipe came from my Grandpa, but recently I found out that it came from my mother�s boss. My mom�s boss brought the cookies into work one day for a potluck. Everyone wanted to recipe, including my mom.

She began making these cookies at home, and my Grandpa loved them. He soon asked for the recipe from my mom and began making them all the time. Because he made the cookies a lot, I had always thought my mom got the recipe from him.

Originally, we made these cookies in the fall around Halloween and Thanksgiving just because that is when a pumpkin recipe seemed appropriate. When the cookies started to be in high demand, my mother and I started baking them all times of the year.

Although everyone has their reservations when they hear it�s a cookie made from pumpkin, once they try it they want more. My dad, who is a very picky eater, and refuses to eat any fruit or vegetable, loves these pumpkin cookies. My mom makes batches to take to work, for me to take to lunch, or even to send me some when I�m at school.

For the cookie to taste just right, no ingredient in the recipe can be compromised. My mom ran out of cinnamon one day, so she decided to leave it out. This completely altered the cookie�s wonderful taste and ruined the whole batch. One time while making the cookies, I became confused and forgot whether I put in baking soda or baking powder already. I ended up adding too much of one of them, and the cookies tasted terrible.

What makes these cookies so good is the fact that they are so different from any cookie I have every tasted. The texture is more like a cake or muffin than a regular chocolate chip cookie. Also, after a few days, most cookies become hard, but the pumpkin cookies never do. The taste is so original. Try one, and I am sure that you will enjoy it!
