Fudge

2 cups sugar
12 marshmallows
1 teaspoon vanilla
Few grains salt

2/3 cup evaporated milk
1 cup broken nuts
1 stick butter
6 oz (1 cup) semi sweet choc bits

Mix sugar, milk, marshmallows, butter, and salt in a heavy 2-quart saucepan.

Cook slowly at first, stirring constantly, over medium heat to a rolling boil.

Stir for 5+ mins.

Then take off heat and add chocolate bits, stirring until melted.

Stir in nuts and vanilla and pour in buttered pan.

Cool.

If cooked too little, the fudge will not harden. If cooked too much, it won't be creamy.

Cheese Straws

1 cup cheese (any kind), grated
2 cups all-purpose flour
1 ¼ sticks butter
1 teaspoon salt
1/2 teaspoon red pepper

Work all the flour possible into the butter. If butter is soft, flour can be added all at once. If butter and flour are not soft enough, then alternate them.

Be sure the flour and butter are well mixed.

Add the cheese.

Bake in 375 degree oven on an ungreased cookie sheet for 10 minutes or until firm on bottom.

They will turn golden brown when cooled.
