Cheese Cake
2 8 oz. pkgs. softened cream cheese
2 eggs
2/3 cup sugar
1 tsp. vanilla
1 store bought gram cracker or oreo pie crust
1 pkg. of strawberries sliced
1 cup sugar
1 tbs. cornstarch
 
Cream the cream cheese.  Add in eggs, sugar and vanilla.  Blend with hand mixer till creamy.  Pour into pie crust.  Bake for 25-30 mins. in 375 degree oven or until the filling is set.  Allow to cool at least ten min. before adding toping.  While cake is cooking put strawberries in a pan with just enough water for them to sit in add about 3/4 cup of sugar and cook over a medium fire. Add the cornstarch to � cup of warm water dissolve and add to strawberries. May have to add more water and sugar for desired sweetness and consistency (just play with it).  When strawberries are reduced and liquid is syrupy it is done.  Cover cake with topping and allow to cool in refrigerator at least 4 hours or until cake is firm.
