Banana Tea Bread |  |
Ingredients |

8oz/230g self-raising flour
6oz/170g caster sugar
3oz/90g butter
2 eggs
pinch of salt
¼tsp bicarbonate of soda
1lb/450g bananas (weighed unpeeled), mashed
4oz/110g chopped walnuts
Method |
- Grease and line a loaf tin
- Cream the butter and sugar
- Mix in the flour, eggs, salt and bicarbonate
- Add the bananas and walnuts
- Place in tin and bake for 1¼ hours at Gas Mark 4/180°C/350°F

Tea Loaf |

Ingredients |

8oz/230g self-raising flour
6oz/170g sugar (demerara or caster recommended)
1 egg
1lb/450g mixed dried fruit (I use 6oz/170g each of sultanas and raisins, and 4oz/110g currants, but mix as you like)
½pint/280ml tea, black and hot
Method |
- Make the tea
- Dissolve the sugar in it
- Pour over the fruit and leave overnight
- Grease and line a loaf tin
- Add the egg and flour to the fruit and mix well
- Place in tin and bake for 1½ - 1¾ hours at Gas Mark 3/160°C/325°F
