Banana Tea Bread
Ingredients
  • 8oz/230g self-raising flour
  • 6oz/170g caster sugar
  • 3oz/90g butter
  • 2 eggs
  • pinch of salt
  • ¼tsp bicarbonate of soda
  • 1lb/450g bananas (weighed unpeeled), mashed
  • 4oz/110g chopped walnuts
  • Method
    1. Grease and line a loaf tin
    2. Cream the butter and sugar
    3. Mix in the flour, eggs, salt and bicarbonate
    4. Add the bananas and walnuts
    5. Place in tin and bake for 1¼ hours at Gas Mark 4/180°C/350°F
    Tea Loaf
    Ingredients
  • 8oz/230g self-raising flour
  • 6oz/170g sugar (demerara or caster recommended)
  • 1 egg
  • 1lb/450g mixed dried fruit (I use 6oz/170g each of sultanas and raisins, and 4oz/110g currants, but mix as you like)
  • ½pint/280ml tea, black and hot
  • Method
    1. Make the tea
    2. Dissolve the sugar in it
    3. Pour over the fruit and leave overnight
    4. Grease and line a loaf tin
    5. Add the egg and flour to the fruit and mix well
    6. Place in tin and bake for 1½ - 1¾ hours at Gas Mark 3/160°C/325°F
