Christmas Fudge

  • 4 ½ cups sugar
  • ½ cup butter
  • 1 13 oz can evaporated milk
  • 1 12 oz. bag semisweet chocolate morsels
  • 1 7 oz jar marshmallow whip
  • 8 ozs. chocolate candy bars
  • 2 cups nuts
Put chocolate, marshamallow whip and nuts in a large bowl. Butter the bottom of a 13" x 9" pan. In a large saucepan, combine sugar, butter and milk. Bring to a boil over medium heat, stirring constantly. Boil for six minutes. Very quickly pour it over the chocolate mixture and mix well. Pour into buttered pan.
Yield 5 pounds.

Low Fat Chocolate Cappuccino Cheesecake

Chocolate Crumb Crust
  • 3 8 oz pkgs. low fat cream cheese, room temperature
  • 1 cup sugar
  • 3 large eggs
  • 8 1 oz squares semi-sweet chocolate
  • 2 Tbsp whipping cream
  • 1 cup fat free sour cream
  • ¼ tsp. salt
Great Cake
  • 2 tsp instant espresso coffe, dissolved in ¼ cup hot water
  • ¼ cup coffee liqueur
  • 2 tsp. vanilla extract
  • 1 cup whipping cream
  • 2 Tbsp powdered sugar
  • 2 Tbsp coffee liqueur
Crust Combine 1 cup chocolate wafer crumbs, ¼ cup softened butter, 2 Tbsp. sugar and ¼ tsp cinnamon; mix well. Press mixture into buttered 8 inch springform pan.
Preparation
  1. Prepare chocolate crust. Set aside
  2. Beat cream cheese until smooth. Gradually add sugar, mixing until well blended. Add eggs, one at a time. Beat at low speed until very smooth.
  3. Melt chocolate with cream over boiling water; stir until smooth. Blend well with cheese mixture. Add sour cream, salt, coffee, liqueur and vanilla; beat until smooth.
  4. Turn into pan. Bake in oven center at 350° for 45 min. or until sides are puffed. Center will be soft but will firm up when chilled. Turn oven off; leave door ajar. Allow cake to cool in oven for 45 min. Cover and chill for 12 hours. Remove pan sides.
  5. Whip cream. Flavor with sugar and liqueur. Garnish with mounds of whipped cream.

Walnut Cheesecake

Crust:
  • 3 cups chocolate chips
  • 1 ½ cups finely chopped walnuts
  • 4 egg yolks
  • 6 tablespoons melted butter
  • ½ teaspoon almond extract
  • ½ teaspoon vanilla extract
  • 6 egg whites
  • ½ cup sugar
Baked Goodies
Combine all ingredients except egg whites and sugar. Beat egg whites until foamy, gradually adding sugar while beating; beat until stiff peaks form. Mix 1/3 of the egg-white mixture with chocolate/nut mixture, then fold in the remainder. Put into buttered and floured 10-inch springform pan and bake at 325 degrees for 25 to 30 minutes. Cool.

Filling:

Beat together cream cheese, lemon juice, sugar, and vanilla. Add egg yolks one at a time while mixing. Pour cream cheese mixture on top of cooled chocolate walnut crust and bake at 325 degrees for 50 to 55 minutes.

Icing:

Whip heavy cream until stiff peaks form. Add sugar and extracts and mix slowly. Place on top of cake. Slowly drizzle melted chocolate over cake.

Spumoni Pie

This is the easiest recipe you will ever make and is infinitely variable depending on the main course. You will need 3 pints of ice cream or sherbet, a graham cracker crust, some chopped nuts or chocolate sprinkles, and whipped cream.

Let the ice cream soften slightly so that you can spread it in layers in the pie crust. Freeze. Before serving, top with whipped cream and nuts/sprinkles. Absolutely wonderful!!!

Chocolate Spritz

  • 2 c. flour
  • ½ cup butter
  • 1 egg
  • 1 tsp vanilla
  • ½ tsp salt
  • 1 c. sugar
  • 2 Tbsp milk
  • 2 squares of unsweetened chocolate melted
Cream butter and sugar. Add egg, vanilla, salt. Alternate flour with milk. Add chocolate. Blend well. Force through cookie press. Give to eager kitchen assistants to decorate in any number of ways. Bake at 350° for 8 to 10 minutes. Allow to cool. Best when frozen in airtight bags or containers.

Snickerdoodles

  • 1 cup shortening (part butter)
  • 1 ½ cups sugar
  • 2 eggs
  • 2 ¾ cups flour
  • 2 tsp. cream of tartar
  • 1 tsp. soda
  • ¼ salt
  • 2 Tbsp. Sugar
  • 2 tsp. cinnamon
Heat oven to 400°. Mix shortening, sugar and eggs throughly. Stir together flour, cream of tartar, soda, and salt; blend in. Form in 1" balls. Roll in mixture of the 2 Tbsp sugar and cinnamon. Place about 2" apart on ungreased baking sheet. Bake 8 to 10 min.
