Malabar recipe pickled walnuts contain hand-picked whole green walnuts, apple cider vinegar, with ginger, cinnamon, garlic, black peppercorns, cloves, mustard seed, celery seed, allspice, mace, bay leaf (used in brining process), and salt (residue from brining process). The malt vinegar variety of this recipe was introduced in 1999, and returned in 2001 with a red wine vinegar variety; these two recipes contain ginger, but do not contain cinnamon.
