SuperYeast X-Press Instruction

                                                                       

These instructions by Me Buddy’s Brew Shop may or may not be exactly has recommended by the manufacturer but have been applied to this product with very good results.

 

Making alcohol up to 20 % is not very difficult if you have some basic equipment and good ingredients. Read through all instructions first.

 

Equipment:

You will need a food grade container large enough to hold at least 30 litres (with a lid) for the fermentation, a long stirring spoon, thermometer and a hydrometer (type used in beer and wine making).

Other equipment used to produce a much cleaner alcohol may be bought or rented include Carbon Snake or Wine Filter with carbon packed filter pads.

 

Note: Plastic garbage cans though cheap may not be safe to brew any alcoholic beverages in, use proper brewing equipment available at your Home-Brewing Supply store.

 

Ingredients:

The ingredients needed are 8 kg. of regular table sugar (4 bags) 1 pkg. of SuperYeast X-Press (135g.) And 1 pkg. of SuperKleer fining (used to settle out the yeast sediment once fermentation is complete)

 

Cleaning: All your brewing equipment should be clean from visible dirt and sanitized with a solution of Sodium Metabisulfite before using.

 

Mixing:

You need to dissolve 8 kg. of sugar in your large plastic container. The easiest way to do this is to add all your sugar to the container first, then add about 2 gallons (8-9 litres) of very hot water. Stir until sugar is dissolved. Once sugar is completely dissolved, add water to fill your container to the 25 litre mark (alternating between cold and warm water) until you end up with 25 litres at a temperature of about 80 degrees F. Add the SuperYeast X-Press and stir vigorously for one minute. Place cover on your container loosely.

 

Fermentation:

The fermentation temperature is best at 75 degrees F. If you cannot keep this temperature constant with a thermostat 24 hours a day, then use a Brew Belt.(Brew Belts are designed to keep your fermentation at a healthy temperature) Within a few hours you will see fermentation has started. Each day for the first 3 days, using a sanitized stirring spoon you may stir up the solution, rousing the yeast (not absolutely necessary, but it seems to speed fermentation.) It will take approximately 1 week for fermentation to complete. A couple of days sooner or a week longer is not unusual. Using your hydrometer you can check if fermentation is completed. If all sugars are converted to alcohol you should see a reading on the hydrometer of about .990 - .980. (See instruction sheet includeed with your hydrometer.) If the reading on the hydrometer is showing 1.000 or higher, allow to ferment a few more days.

 

Note: When taking a hydrometer reading, make sure you sanitize it before taking a reading. Give the hydrometer a little spin to dislodge any gas bubbles clinging to it to get a more accurate reading.


Sedimentation:

Once fermentation is complete the heavier yeast sediment will settle to the bottom on its own, but to speed up this process we add a fining agent (SuperKleer) This is a 2 part fining (instructions on its use are printed on it) used to settle out the finer sediment and ready the alcohol for Carbon Filtration. Just before adding the SuperKleer it is best to syphon the alcohol off the heavy sediment, clean out fermenter, then return alcohol to fermenter add Potassium Sorbate (2 ˝ tsp) and Sodium Metabisulfite (˝ tsp) (These 2 ingredients will preserve and stabilize your alcohol, same way as you do for Winemaking)  and stir 2-3 times a day for 2 days (this is to de-gas the alcohol. De-Gassing allows the fining to settle out the sediment un-interrupted ) after de-gassing then add the Superkleer fining (small packet first, wait at least 1 hour, then add larger packet.)

 

Note: Even though it states on the packaging that it will clear in 12 - 48 hours, allow it to settle for 7 - 10 days for best results. This will allow the carbon filtration done later, to leave you with a much cleaner tasting alcohol.

 

Note: If using a brew belt during fermentation remove once fermentation is complete and alcohol de-gassed, Temperatures below 70 degrees F. will help with sedimentation.

 

Note: A common mistake that people will make is interrupting  the Sedimentation process by racking (syphoning) the alcohol off the sediment before the SuperKleer has had a chance to properly clear. It is VERY important to allow at least 7 -10 days for SuperKleer to do what it was intended to do.

 

Once the alcohol has cleared sufficiently, you can Syphon carefully (avoid transferring any sediment at this point) the alcohol to another sanitized container. Once off the sediment your alcohol is now ready for Filtration.

 

Note: At this stage you may notice that the alcohol as a yellow or green color to it, this is normal. Filtration removes it.

 

Filtration: This is the last step to making your alcohol. For people familiar with filtering wine, they know that the wine filter will polish their wine and remove the very fine particles of yeast. We are doing the same thing with our 20 % alcohol also, but instead of using a standard wine filter pad, we use carbon filter pads. These pads not only remove the fine sediment, but will also absorb most of the color, flavours and odors that are present in the alcohol after fermentation.(yeasty tastes and haze).

Note: Another way to filter your alcohol is by using the Carbon Snake. This filter uses granular carbon in a tube which your alcohol slowly soaks through. This method is much slower, but efficient in absorbing off tastes from your alcohol. For more instructions on using the Carbon Snake, see your Home-Brew Supply store.

 

Total time for making your 20 + litres of 20 % alcohol is just 2-3 weeks. Cost of making it is about $1.00-$1.50 per 26 oz size bottle!

 

There are many ways to use your alcohol. There are more than 40 extract flavours of commercial type liqueurs available, it can be added to slush instead of using vodka, it may be blended with commercial type alcohol like Rum and Whiskey or you may like it on its own with some fresh or frozen fruit concentrate.
