Uncooked Fondant Sweets

(from the Huletts Icing Sugar bag)


Yield: About 60 quarter-sized sweets

1 egg white
2 tsp cold water
pinch of salt
1 tsp vanilla essence
2 cups (or more) icing sugar

1. Beat the egg white, water, salt and vanilla essence in a bowl.
2. Sift in the icing sugar, a little at a time, stirring continuously, until the mixture is firm enough to knead.
3. Knead until smooth.
4. Roll out to a thickness of 5mm and cut into shapes. Allow to dry.
