Raisin and walnut loaf

Yield: 1 loaf

500 ml (2 cups) self-raising flour
pinch of salt
60g (3/8 cup) butter
60 ml (3/8 cup) sugar
125 ml (1/2 cup) seedless raisins
100g chopped walnuts
1 egg, beaten
15 ml (1 tbsp) honey
125 ml (1/2 cup) buttermilk

1. Preheat oven to 180 C.
2. Sift flour and salt into a mixing bowl.
3. Rub butter in with finger tips and add sugar, raisins, walnuts, and egg and mix until well combined.
4. Stir honey into buttermilk.
5. Add to dry ingredients and mix with a wooden spoon until ingredients are just mixed.
6. Spoon into a greaded loaf pan. Brush with a bit of extra buttermilk.
7. Bake for 45-50 minutes or until form to touch.
8. Cool in tin for 5 minutes, then turn onto a wire rack.
