Oat Crunchies

(from the side of the No Name Brand Quick Oats)


Yield: Approximately 60 bars

3 cups desiccated coconut
1 cup cake flour
4 cups No Name Oats
1 3/4 cups sugar
1 tsp salt
1 tsp ground cinnamon
1 cup butter, melted
3 tbsp golden syrup
2 tsp bicarbonate of soda (baking soda), dissolved in 1/4 cup milk

1. Heat oven to 180 C.
2. Mix together all the dry ingredients.
3. Mix melted butter and syrup together.
4. Stir syrup mixture into dry ingredients.
5. Add bicarbonate mixture and blend well.
6. Press lightly into a lightly greased baking tray (1 cm deep).
7. Bake for 15-20 minutes or until golden brown.
8. Remove from oven, cut into squares.
9. Leave to cool before removing from baking tray.
