Kerry cake

Yield: 1 8x8 cake

3/4 cup butter
1/2 cup granulated sugar
3 eggs
grated rind 1 lemon
3 medium apples, pared and cored
1 1/2 cups cake flour
1/4 tsp salt
1 1/2 tsp double-acting baking powder

1. Preheat oven to 375 F. In large bowl, beat butter with sugar until creamy. Then beat eggs one at a time.
2. Stir in lemon rind and diced apples. Sift together flour, salt, and baking powder. Fold into butter mixture until well-blended.
3. Pour into greased baking dish. Bake about 30 min or until golden.
