Bachelor's Taco Soup

This is one of my Dad's recipes, and it's great.  You can dress it up by serving with cheese and sour cream.  Don't forget either Doritos (for a more dip like dish drain some of the water off the vegetables), corn bread or for a cheaper dish (and higher protein) use rice (I like brown rice best).

As the days pass it will get hotter in your fridge, so don't add more spices to the dish (at least until after you've made it once and know how it turns out)  We add salsa to our individual bowls, but that's a personal choice.

This is a really cheap meal, tastes great, and will make at least six servings.  If you want to stretch it, serve over rice.

1 lb ground beef, browned & drained
1 onion, simmered with the ground beef
2 cans hominy (I like white hominy best, and I hate hominy.  For some reason I really like it in this dish.  If you really hate hominy, corn works too)
2 cans pinto beans
2 cans Rotel tomatoes
1 pkg taco seasoning
1 pkg original Ranch Style Dressing Mix

Instructions:  Dump all of the ingredients except the ground beef and onion into a large pot, and put on the stove to heat.  Do not drain the vegetables.

While it's heating, brown the meat and onion, drain, and add to the pot.
