PJC's Harry Potter Slash Recommendations
Now, some of this is pretty squicky stuff, twincest, threesomes, etc. I'm not really into cross-gen as a rule, with only three glaring exceptions (one of which is actually het, but it's such a good story . . .), and one of them is *supposed* to be kinda squicky, so that's all right. If that makes sense.
No grossly underage stuff here, i.e. everyone's usually at least fifteen or sixteen. I once tried to read a Prisoner of Azkaban Harry/Ron, and, ew.
My rec list is also probably hindered by the fact that I. Don't. like. Sirius. I only have one Sirius/Remus here.
Harry/Draco:

The rest of Rhysenn's stuff (all excellent) can be found at her site:
http://rhysenn.morethanart.org/slash/ (if it doesn't want to load, just click the "stop" button. I think her counter's down)
Her story, Slave of Darkness,

Was part of the inspiration for my own H/D completed work, Sign, Symbol, Token (which has gotten acceptable reviews)

Eggbert does mostly Harry/Ron, Oliver/Percy, and (gasp!) Neville/Severus. I love her/his (I try never to make assumptions about the gender of fanfic writers) Neville/Severus fics, even though most people I tell them about are dubious.
http://www.fanfiction.net/u/87305
If you want one to sell you on Neville/Severus, start with The Dark Secret of Greenhouse Four. That's where I started. It's also PG-13.
Oliver/Percy:
Cairnsy writes some of the best Oliver/Percy fics. She's also one of Percy Weasley's biggest fans, so she keeps an archive of Percy-related slash:
http://www.geocities.com/percy_perfect/slash.html
You can find the bulk of Cairnsy's work here:
http://www.fanfiction.net/u/5680
And then there's Severus/Remus. I'm not overly fond of Sirius, preferring to slash Remus with Severus. Though I'll recommend my favorite Sirius/Remus fic after this.
All sorts of good Severus/Remus fics (including one of my own) are here:
http://www.theparapet.net/ls/fanfic/index.html
I love Khirsah's MAWP arc (the acronym stands for "Muggles Against Wizard Procreation" and the theory is that some muggles are doing something to the food at Hogwarts to make everyone -- and I do mean everyone -- gay), and Khirsah and Ailei's Drawing Down the Moon is my favorite Sirius/Remus. I actually must confess to having read it three times now, and I think I'm about due for a fourth reading.

Plumeria and Lissanne wrote two Fred/George fics that are just beautiful. They are:
Separation:
http://www.fanfiction.net/s/334764/1
and Reunion:
http://www.fanfiction.net/s/376150/1
And for Harry/Draco, plu has two stories:
It All Started at the Bookstore:
http://www.fanfiction.net/s/380093/1
and Certain:
http://www.fanfiction.net/s/276824/1
If fanfiction.net is giving you trouble, you can also find them at plu's own archive
Harry/Ron again. This time it's Knight Smeg, who also writes Fred/George (the "Wanting You" trilogy is a particular favorite, and it's both H/R and F/G, with some F/H/G (yes, you did read that right)):

My squickiest cross-gen 'ship is Lucius Malfoy/Harry Potter. I know, ew, but don't judge until you've read Just Silver's Swan:
http://www.fanfiction.net/s/270357/1
And its WIP sequel, Marble Angel:
http://www.fanfiction.net/s/383173/1
I have a Lucius/Harry plot bunny but I haven't had the time or energy to write it out. But I will someday. I have the ending planned out already.
Just Silver also has a really good Harry/Draco trilogy, Fire and Ice, Love and Darkness, and Lovers and Family, at ff.net, and her Tom Riddle/Lucius Malfoy Freeing the Moon is just enchanting.

Oh, and then there's Mary Sue Whipple's Harry Potter and the Horrid Pain of the Artiste. Harry/Draco and laugh-out-loud funny (chapter 2 is the source of my sig for fanforum.com). It's posted in two places, on geocities.com:
http://www.geocities.com/school_idiot/hp.htm
and on fanfiction.net:
http://www.fanfiction.net/s/397806/1
If you read the ff.net version, please review. This story needs more reviews.
Another new favorite slash writer is TheTrio, but most of it's written by one of the three who post there, however. Primarily Harry/Draco.

Yeah, I know, it's not slash, but you have *got* to read Riley's Pawn to Queen, which is Snape/Hermione:

Well, this is what I meant when I said that this would be updated as I remembered my favorite fics. Mister Bear's Dreams of Enchantment is a wonderful Harry/Draco AU story:

Another new favorite Severus/Remus, this one from JayKay.
Here's the first installment, Wicked Game I: Strange What Desire Makes Foolish People Do
It's available at ff.net and at JayKay's site.

Ack! Another favorite slipped my mind -- Reggibar's Bill Weasley/Snape stories.
The one that sold me on the ship was Liar, Liar
