Chocolate and Orange Mousse


 

 

METHOD

 

1. Melt chocolate in a bowl over hot water

2. Stir orange juice and grated rind into chocolate

3. Add liqueur or brandy, and egg yolks

4. Whisk egg whites until standing in soft peaks, then gently fold into chocolate mixture using a metal spoon

5. Spoon mixture into 4 glasses and leave overnight if possible

6. Garnish with whipped cream and toasted almonds or chocolate curls
