Tomato Veggie Rice

Recipe for Tomato Veggie Rice

 

Ingredients For Tomato Veggie Rice:

1 meduim (220 g) sayote, (chayote), diced
1 meduim carrot, diced
1 beef boullion cube
1-2/3 cup uncooked rice, washed rice
1 can (140 g) Del Monte Tomato Sauce
3 stalks (200 g) pechay (native cabbage), shredded

  1. Saute bouillion cube in 3 Tbsp. oil. Add rice and cook while
    stirring for 2 minutes. Add 1-1/2 cups water, Del Monte Tomato
    sauce, 1 tsp. iodized salt (or 1 Tbsp rock salt) and 1/4 tsp. pepper.
    Bring to a boil and reduce heat. Cook for 20 minutes. Add vegetables.
    Stir until well blended. Continue cooking for 10 minutes

MAKES 6 SERVINGS.
