South Jersey Applejack Pumpkin Pie
Applejack a.k.a. Jersey Lightning , a popular whiskey in earlier times in Down Jersey, found its way into many recipes. Here it gives the pumpkin pie an extra kick, but use bourbon, it thats what you have handy.

Makes 2 pies;
Preheat oven to 460 degrees F.
6 eggs, slightly beaten
2 cups sugar or brown sugar
1 tsp. salt
1 -1/2 tbsp. pumpkin spice
3 tbsp. applejack or bourbon
2 tsp. vanilla
2 -1/2 cups pumpkin puree
3 cups evaporated milk
2 uncooked pie shells
Combine the eggs, brown sugar, salt, spice,bourbon and vanilla.
Beat in the pumpkin puree and slowly add in and mix the milk.
Pour into pie shells, place on a baking sheet and bake on the middle shelves at 450 degrees F. for ten minutes, then lower temp to 350 degrees and bake for 40 to 45 minutes more.Test for doneness with a knife inserted into the pie, it should come out clean.
Turn pies as they are checked.
