Pavlova

4 eggs
pinch of salt
8 oz of castor sugar
1 tsp vinegar
1/2 tsp vanilla extract
1 level desert spoon of corn flour
I flat round plate

Make sure there is not water or dampness in your mixing bowl. If there is the eggs won't beat up.
Beat the whites of 4 eggs with a pinch of salt for 5 to 6 minus gradually adding in sugar, vinegar and vanilla. Beat until stiff.
Gently fold in the corn flour. Wet the plate with cold water then heap mixture on to the damp surface
For electric oven-Preheat to 400 degrees then set back to 250 and bake undisturbed for 1 1/2 hours  No longer
Gas oven.  Bake for 10 mins in 400 then fo a further 1 hour turned to low
Topping
Top Pavlova with whipping cream
Decorate with fruit as desired-ie sliced bananas, kiwi,strawberries,mango cherrie (Whatever your heart desires)
sprinkle grated chocolate over all  A little work making it but well worth the effort
