| Stuffed Peppers
This recipe is really Mum's because I could never find this one in a book, we always had to call Mum. I'm really glad I still have the recipe after she's gone. 2lb ground beef 1 onion - chopped fine 1 celery stalk - chopped fine 1/2 c cooked rice 1 egg 4-6 green bell peppers 2 cans tomato soup 2 cans green beans 4-6 potatoes - peeled and quartered Combine onion, celery, rice, egg, salt & pepper. Add beef. Mix thoroughly. Cut peppers lengthwise, so that stem halves can be removed easily. Discard stems and seeds. Fill pepper halves with meat mixture until round on top. Place in a large roasting pan. Mix soup with 1 can of water. Pour over peppers. Cover with lid or foil. Bake 1 hour at 325 Arrange the potatoes around the peppers, add water to cover them. Salt and pepper the potatoes. Bake for 45 minutes. Add beans, stirring and adding water to cover vegetables. Bake 15-30 minutes more, testing the potatoes for tenderness. |
