Ratatouille
1 aubergine
2 zucchinis
1-2 sweet red peppers
2 onions
3-4 tomatoes
2 tablespoons olive oil
1 to 4 cloves garlic
basil
salt
freshly ground black pepper

Fry the chopped onion until golden brown in oil.  Add the other
diced vegetables.  Cover and simmer until soft, about 30 minutes.
Season with salt, pepper and basil.
