GURPS Undead contains a fantastic bibliography. I have assembled it here, with links to Amazon.Com if you want to purchase them. I am an Amazon.Com affiliate, but primarily I am hoping to make it easy for people to find the books and movies.
It is important to note that just because a book or film is here it does not mean I like it! Personally, I dislike Anne Rice (a lot), but if it was in GURPS Undead it is here.
I have also added some other books I have read that have good treatments of the undead. I have marked these with an asterisk. Note: some of these books may be out of print. Email me with suggestions, if you like.

"He was a zombie?"
South Park. The Holloween Episode-includes little-known zombification methods, topical ointments, and botched Diagnosis rolls. Oh, and Kenny dies.
