6-8 pieces of chicken 2 large onions, chopped
1 green pepper, chopped 3 garlic cloves, chopped
3 stalks celery, chopped 1 48 oz can tomatoes
Seasoning to taste: parsley, Worchestershire sauce, tabasco, thyme, oregano,
2 bay leaves, salt and pepper
1. Dry chicken and brown in 1/4 cup oil, removing from pan when
lightly brown.
2. Add more oil to pan and saute vegetables.
3. Add tomatoes, crushing with hands or back of slotted spoon.
4. Add seasonings and heat through.
5. Return chicken to mixture and cook until chicken is done -
about 20-35 minutes.
6. Serve on bed of rice.
