CATHY'S MEAT LOAF



3 lbs ground beef	        1 medium potato, grated
1 carrot, grated	        3 stalks celery, finely chopped
1 green pepper, chopped	        1 tsp pepper
2 tsp salt	                � tsp ground sage
parsley     	                1 C fine bread crumbs
3 eggs, well beaten	        � C tomato juice

1.  Mix first nine (9) ingredients
2.  Add bread crumbs and eggs, mix well
3.  Form into a loaf shape in open casserole/baking dish
4.  Bake for 10 minutes at 500 degrees
5.  Lower oven to 350 degrees
6.  Add tomato juice and cover dish
7.  Bake for an additional 1 � hours
