Chicken Scampi
1/2 c. butter
1/2 c. olive oil
1 tsp. dried parsley
1 tsp. dried basil
1/4 tsp. dried oregano
3 cloves garlic, minced
3/4 tsp. salt
1 tbsp. lemon juice
4 boneless chicken breast halves, sliced lengthwise into thirds

In a skillet heat the butter or margerine and oil over med.-high till melted. Add the parsley, basil, oregano and garlic and salt and mix together in the skillet. Stir in lemon juice.

Add the chicken and saute for about 3 minutes or till white. Lower heat and cook for about 10-15 minutes more or till chicken is cooked through and the juices run clear. More butter can be added if needed. Serve with rice or noodles. Makes 4 servings.
